Fresh oyster mushrooms, grown outdoors on natural logs, or wild foraged.
Never forced to fruit, grown in bags, or in controlled environments.
Cultivated varieties are Blue Dolphin and Polar White, both cold-weather fruiting species.
Foraged varieties are usually brown/grey, but occasionally in summer we find golden oysters.
