Sweet Potato Hash

Sweet Potato Hash
(recipe for two… or four if your Sweet Potatoes are large)
Ingredients
2 Sweet Potatoes (regular size)
1 Green Pepper (or Red)
1 Small Yellow Onion
2 Eggs
Olive Oil
Butter
Salt & Pepper
Garlic Powder (optional)
Instructions
Peal and dice sweet potato.
Place diced sweet potato in a glass bowl. Drizzle and stir in olive oil.
Seal bowl with BPA free plastic food wrap and microwave for 4 minutes. (Set aside)
Dice green pepper and onion.
Drizzle olive oil into a frying pan (medium high heat) -
Add green pepper and onion to pan and sauté until onion starts to soften (about five minutes). Salt and Pepper to taste. -
Add Sweet Potatoes to the green pepper and onion.
Add two Tbsp of butter for additional flavor and to help crisp the outside of the sweet potato.
Optional (Add and stir in a light dusting of garlic powder to taste).
Cook for an additional five minutes. -
Take pan off heat. -
In a small pan cook an over easy egg in olive oil. (Or, your favorite way to cook an egg) -
On a medium size plate scoop a portion of the Sweet Potato Hash.
Add the over easy egg to the top of the hash.
Salt and Pepper to taste and enjoy.
Additional Ideas: -
Turkey: If you like meat with your hash you can cube and sauté a Turkey breast in olive oil with a little salt and pepper and add to the hash. -
Mushrooms: For our Vegan friends try this yummy idea to add to the Sweet Potato Hash:
You will eliminate the eggs and butter from the above recipe.
Ingredients:
Mushrooms: Portobello (or, your favorite type)
Olive Oil
1/8 teaspoon of smoked paprika
1/8 teaspoon chili powder
Salt and Pepper
Preparation: -
Add olive oil, sliced mushrooms and a little salt to a skillet.
Cook over medium heat until the mushrooms have released their liquids (about four to five minutes) -
Increase heat to medium high.
Stir in paprika, chili powder and a few shakes of pepper. (Cook for for an additional four to five minutes). -
Take off heat and set aside. -
Stir mushrooms into the sweet potato hash about a minute before pulling the hash off of the heat.
- This is a tasty bacon alternative. I have started adding this to dishes and salads that call for bacon. I often add a bit more smoked paprika for a stronger smokey flavor. One of my favorite breakfast recipes. You can have fun and change it up a bit each time
The longer you allow it to simmer, the more the flavors will bind.
Add more salt and other spices (if desired) to taste
