Charred Peach and Tomato Salad

July 2022 Recipe Contest Runner-up Tamara Hatch offers up a sweet and summery market salad.

Ingredients:

  • 4 peaches

  • 4 tomatoes

  • 1 medium cucumber

  • sprig of basil, sprig of mint (4-6 leaves of each)

  • 3 Tablespoons feta cheese

Instructions:

  1. Heat grill to approximately 350 degrees.

  2. Halve and pit peaches, halve tomatoes.

  3. Grill tomato and peach halves until slightly charred, about 5 minutes, flipping half way through.

  4. Dice cucumber, charred tomatoes and peaches.

    In large bowl, gently toss the tomatoes peaches and cucumber. Chiffonade mint and basil leaves and garnish tomato/peach mixture. Sprinkle feta cheese and serve.

This salad can be served hot or cold.
