🌸 Mimosa Flower Cordial: A Recipe from the Wild + Wise Kitchen

Delicate and fragrant, mimosa flowers carry the bright spirit of summer—light, floral, and just a bit ethereal. This small-batch cordial turns those fleeting pink blossoms into a gently sweet, heart-lifting syrup. Add a splash to sparkling water, iced tea, or cocktails when you need a little joy in your cup.

Harvest only from unsprayed trees, and always forage mindfully—leaving plenty for the pollinators and the tree’s own cycle of growth.

  • 3 cups fresh mimosa flowers (fluff only—remove stems, green parts, and seed pods)

  • 3 oranges Silced

  • 2 quarts water

  • 3–4 cups sugar, to taste

✿ Instructions

  1. Harvest with care.
    Gather mimosa blooms on a dry morning, when they are bright pink and fluffy. Let them rest on a clean towel for an hour or two to give any insects a chance to wander off. Avoid rinsing unless absolutely necessary.

  2. Make an infusion.
    Bring water to a boil, then pour over the mimosa blossoms, and orange slices in a heat-safe bowl or non-reactive pot. Cover and steep for 6–12 hours, or overnight for stronger flavor and color.

  3. Strain the magic.
    Strain the mixture through a muslin cloth or fine sieve, pressing gently to extract every last drop of floral essence.

  4. Sweeten the cordial.
    Pour the infusion into a saucepan. Add sugar and bring to a gentle boil, stirring to dissolve. Simmer for 5–10 minutes until slightly thickened.

  5. Cool + store.
    Allow to cool. Store in sterilized glass jars in the fridge for up to 3 weeks, or freeze in smaller portions (ice cube trays work well!) for longer storage.

Serving Suggestions

  • Splash into sparkling water with a slice of lime.

  • Stir into lemonade or hibiscus iced tea for a twist.

  • Add to cocktails for a floral note (pairs beautifully with gin or elderflower liqueur).
