Roasted Peach Salsa with Summer Veggies

Ingredients

  • 2 cups of peaches diced

  • 1 diced Roma tomatoes

  • 1/4 cup caramelized yellow onion

  • 2 Tsps of Green Chili (hot or mild)

  • 1/3 cup chopped cilantro the juice of one lime or more to taste salt to taste

Instructions

1. Preheat a cast iron pan or non stick pan on medium high heat.

2. When the pan is piping hot, brush the peaches with olive oil and place them flesh side down

3. Sear 5 - 8 minutes, rotating if needed, until the peaches are softened but not mushy.

4. While the peaches are cooking, add the remaining ingredients to a mixing bowl and stir with a wooden spoon until everything is fully combined.

5. Once the peaches are done cooking, remove them from the pan and transfer them to a cutting board.

6. Add onions to pan and caramelized with salt, a little sugar and oil until there are golden brown.

7. Dice the peaches and onions and add them to the bowl.

8. Toss together and serve over pork, chicken, fish or chips.
