Sautéed Sochan Greens with Garlic and Lemon
A quick and flavorful way to enjoy sochan, this dish can be served as a side or added to soups, stews, and grain bowls.
Ingredients:
1 bunch fresh sochan greens, thoroughly washed and chopped
2 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes (optional, for heat)
Juice of 1/2 lemon
Salt and pepper to taste
1 tablespoon fresh parsley or herbs of choice (optional, for garnish)
Instructions:
Prepare the Greens: After washing the sochan, remove any tough stems and chop the leaves into bite-sized pieces.
Sauté the Garlic: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Cook the Sochan: Add the chopped sochan greens to the skillet. Sauté for about 4-5 minutes, stirring occasionally, until the greens are tender but still vibrant. If desired, sprinkle with crushed red pepper flakes to add a bit of heat.
Season: Squeeze the juice of half a lemon over the greens, then season with salt and pepper to taste.
Garnish and Serve: Remove from heat, garnish with fresh parsley or herbs if desired, and serve immediately as a side dish or incorporate into other meals.
Notes:
If you're new to sochan, start with a smaller amount, as the slightly bitter taste may take some getting used to.
You can also add a handful of other greens, like spinach or kale, to balance out the flavor.
