Trefoil Gardens Tomato Pie

Tis the season for TomMaTo Pie!

Celebrate the bounty of summer with this delicious Tomato Pie recipe from Trefoil Gardens! This savory pie features a flaky pre-baked crust filled with layers of juicy tomatoes, crispy bacon, caramelized onions, fresh basil, and a creamy, cheesy mixture that’s perfectly seasoned. It’s an irresistible combination that’s sure to become a family favorite.



Prebake pie crust ( I love this recipe for a shortcrust)

4 lbs tomatoes - sliced in half and squishy part squeezed out

1/2 tsp kosher salt

1 onion - diced

3 slices thick cut bacon - chopped

1/4 c sliced basil

8 oz grated cheese ( I used sharp cheddar)

1 egg lightly beat

1/2 c mayonnaise

few splashes hot sauce

- Prebake pie shell

- Salt and drain tomatoes - lightly salt and set in colander to drain

over bowl

- Saute bacon and onions 5 - 10 minutes (I put mine in airfryer at

350 for 10 minutes)

- Squeeze as much moisture as possible out of tomatoes

- Combine cheese, mayo, egg, hot sauce and basil

- Fold in bacon mixture

- Spread a third of the cheese mixture onto crust gently

- Layer with half of the chopped tomatoes

- Continue layering finishing with cheese mix

- Bake at 350 for 30 minutes or until browned and bubbly

- Let sit at least 30 minutes after removing from oven


Enjoy this Tomato Pie warm or at room temperature, and savor the flavors of the season
