Wild Mushroom & Bok Choy Soup with Lemongrass and Ginger

This Wild Mushroom & Bok Choy Soup brings together the earthy flavors of shiitake, maitake, or chicken of the woods mushrooms with the brightness of lemongrass and ginger, complemented by fresh bok choy. It's a warm, comforting, and lightly aromatic dish that’s perfect for showcasing the delicate flavors of wild mushrooms while embracing the freshness of seasonal ingredients.

Ingredients:

  • 8 oz wild mushrooms (shiitake, maitake, or chicken of the woods), sliced

  • 1 tablespoon sesame oil or olive oil

  • 1 stalk lemongrass, outer leaves removed, tender part minced

  • 1 tablespoon fresh ginger, minced

  • 2 garlic cloves, minced

  • 4 cups vegetable broth (or chicken broth for added depth)

  • 1-2 tablespoons soy sauce or tamari

  • 1 teaspoon rice vinegar (optional, for a touch of acidity)

  • 1 small bunch bok choy, chopped

  • 2 green onions, sliced

  • Fresh cilantro or Thai basil, for garnish

  • Salt and black pepper, to taste

Directions:

  1. Sauté the Aromatics: In a large pot, heat the sesame oil over medium heat. Add the minced lemongrass, ginger, and garlic, and sauté for 2-3 minutes until fragrant.

  2. Cook the Mushrooms: Add the mushrooms to the pot and cook, stirring occasionally, for about 5 minutes, or until the mushrooms begin to soften and release their moisture.

  3. Add Broth and Season: Pour in the vegetable broth, soy sauce, and rice vinegar (if using). Bring to a gentle simmer and let cook for 10-12 minutes, allowing the flavors to meld.

  4. Add Bok Choy and Green Onions: Stir in the bok choy and green onions, cooking for another 3-4 minutes until the bok choy is tender but still vibrant.

  5. Season and Serve: Adjust salt and pepper to taste. Ladle the soup into bowls and garnish with fresh cilantro or Thai basil.

  6. Enjoy: Serve hot, savoring each warming spoonful.

Tips:

  • Customize the Mushrooms: Shiitake and maitake add a rich, earthy flavor, while chicken of the woods provides a lighter, delicate taste.

  • Optional Additions: Add rice noodles or tofu for a heartier meal, or sprinkle a dash of chili oil for heat.

This vibrant, healthy soup is a nourishing way to enjoy wild mushrooms and garden-fresh ingredients in a light, flavorful broth.
