Ramps are only available for a couple of weeks between late April and early May and are sustainably collected from an amazing and healthy patch (literally acres of forest floor covered with them) in N.C. Mixed top cuts and whole plant.

We don't usually offer foraged crops from that far away, and if you know the flavor and lore of this spring allium, you will understand why we are so excited about this exception.

The way they can elevate a potato or compliment a rich protein (light or dark) is one that anyone who loves food and life should experience.

Up and down the mountains, as far north as Canada, entire festivals are dedicated to Allium tricoccum, and weeks-long family campouts dedicated to them are not uncommon among Appalachian aficionados of this ethereal allium.
